Our mission is to share the best of wagyu beef, a pride of Japan, to everyone throughout the world who comes to visit Hakuba, as well as to provide a memorable dining experience suitable for even the most special of occasions. With this in mind, we set out to build a restaurant that elevates yakiniku to an entirely new level.
Recently, the restaurant industry has tended toward fatty, heavy beef that's filling but often unsatisfying. By contrast, we seek out the finest wagyu from all over Japan, from the northern tip of Hokkaido to the southern island of Okinawa, and, of course, we always prize the high-quality beef of our own prefecture of Nagano, as we look for the right level of marbling, cut at the best angle and thickness, and then grill to perfection to make every bite magnificent.
Yakiniku as Sophisticated Dining
There are some standard dishes at nearly every yakinuku restaurant that you don't even need a menu to know you can order. How, then, can we take something so indicative of casual dining and spin it into gold?
We approach yakiniku as gourmet cuisine, testing and challenging ourselves to make each dish more delicious, more refined. Our menu is the result of the great efforts of our chefs, from the appetizers and soups, to the individual meat dishes, to main courses and desserts. Our à la carte selection in particular offers experiences truly unique to Nakazawa.
Yakiniku is often grilled by the restaurant's guests, yet the grilling itself is an essential element of the final taste. At our establishment, let our grilling chefs exhibit their skills directly in front of you with their finely honed sense for each cut and quality, down to the characteristics of the individual piece.
